Fermented food is the food of the past - and the present - and the future! Fermentation processes are timeless and so diverse that they open almost endless possibilities for creating and discovering new flavors.

A chef and her or his team can ferment many things in their own kitchen - but when there still arises a need for fresh, locally produced fermented raw materials and products, you can contact us.

KOJIFIED RAW MATERIALS

The Aspergillus oryzae or the so-called 'koji' mold is a wonder of the fermented world. It transforms the raw materials on which it grows and the enzymes it produces soften the proteins and enhance the flavors of the foods to which they are added. We offer the following koji-enriched raw materials: organic* white rice, organic black rice, organic red rice, organic buckwheat, organic sunflower seeds, organic millet, organic soybeans - or something else, if that’s what you need.

PRODUCTS MADE ESPECIALLY FOR YOU

Would you like to make kimchi from specific vegetables, but you don't have room for a barrel? You wish you could have soy sauce with some interesting, unusual added ingredient, but you don't know how to make it? You know how to make the naturally pickled carrot, but you don't have time to prepare it yourself? Or maybe you want to grow koji mold on beetroot, but your kitchen lacks an incubator? We know how to and can do all of the above, and if we don’t yet, we are happy to learn something new, together with you and for you.

SMALL BATCHES OF UNIQUE FOODS

In the spring we ferment wild garlic and other wild herbs, in the summer we create different chutneys from seasonal fruits and nuts, sometimes we get a few kilograms of some strange and interesting vegetables to ferment in a new, experimental way... and when our fermentation research trips into the unknown pay off and we have six glasses of something delicious that you can't get anywhere else - that's when we offer it to you. For Restaurant Week, for a unique menu, for special occasions.

OUR REGULAR PRODUCTS

We also offer restaurants and caterers a range of products from our regular offer, which you can get in larger packages and at a different price. Soy and other sauces, miso pastes, kimchis, fresh tempeh, natto, amazake and more - if you would like to offer your guests fresh fermented food made in Slovenia, which is also vegan and healthy, here’s where you can find it.
