KIS IN KVAS!

Kis in kvas … but what does it mean? And why are we called like this?

Kis in kvas means Vinegar and yeast - sounds better in Slovene, trust us. Vinegar, because we lactoferment stuff (in Slovene, lactofermenting vegetables is called ‘kisati’). Yeast, because yeasts are often present in the fermentation processes.

The heart of Kis in kvas are Goran Žerdin and Sanja Čakarun. Goran takes care of the fermentation and comes up with interesting combinations of processes and ingredients, Sanja does all of the public relations, sales, web content and bureaucratic matters. We develop and test all new products together.

OUR PHILOSOPHY

At Kis in kvas we know that a carefully chosen fermentation process of quality raw materials is the right way to create delicious, unique and healthy products.

More than a decade of fermenting various ingredients has taught us that microorganisms and enzymes take exactly as long as they need to reach their destination, no more no less, and that shortcuts usually only lead to places we don't want to go to. Those are the same places one would reach by adding artificial flavors and preservatives.

All our products are therefore made only from simple ingredients in small batches in our kitchen in Ljubljana, which we are very proud of. Each of them passed through our hands and every batch was tasted before it went from the barrel to the jars or bottles. This is the only way we can achieve the quality that is appreciated by both our customers and the chefs of renowned restaurants.

It seems logical to us that we know the vast majority of our suppliers by name: we have visited their farms, oil presses and mills. Outside the Slovenian borders (and as close as possible) we only purchase ingredients that do not grow or cannot be obtained in our country.

We don’t believe in big words and secretive production processes. For all the products we offer, we are happy to explain in detail how and from what we made them, and give you some advice if you want to make them yourself. We believe in fermentation, in authenticity and in a sincere attitude towards everyone who co-creates our story: colleagues, suppliers, partners and, of course, customers.
