SPICY KIMCHI / SUMMER SPICY KIMCHI

Our regular spicy kimchi is made from fresh ingredients that are carefully prepared, mixed and fermented in a barrel for 3-5 weeks, before being transferred into jars and refrigerated. It is unpasteurized, so it’s still quite alive with microorganisms that do wonders for our gut health! If you want to harvest all the benefits it’s therefore best to eat it raw.

Ingredients: Chinese cabbage, daikon radish, spring onion, gochugaru chili flakes, rice flour, garlic, dried tomatoes, shiitake mushrooms, ginger, salt (2%). May contain traces of gluten, nuts, soy, peanuts, sesame and mustard seeds. *Since cabbage does not grow here in the summer, between June and September we replace it with cucumbers. This is how SUMMER KIMCHI is made!

NON-SPICY KIMCHI

For all of you who don't like spicy food, but would still like to eat some kimchi, we made a different, completely non-spicy, but still very tasty version. This one is also additive-free, made with a natural fermenting process, unpasteurized and therefore rich in health-beneficial microorganisms. We suggest you try it with some cheese on a slice of sourdough bread!

Ingredients: Chinese cabbage, daikon radish, carrots, pears, dried dates, shiitake mushrooms, sunflower seeds, garlic, onion, ginger, fresh turmeric root, salt (2%). May contain traces of gluten, nuts, sesame, soy and mustard seeds.

SPICY KIMCHI, AGED AT LEAST 6 MONHS / Still fermenting, ready in july 2024!

The regular spicy kimchi is refreshing, crunchy and sharp, but the six-month aging process transforms it: it adds new aromas, the taste becomes more complex and well-balanced. Since aged kimchi also contains a bit more salt than the normal spicy kimchi, it is often used in smaller quantities and is more of a condiment than a side dish. Excellent in combination with smoked foods, rice and, of course, also as an addition to burgers and sandwiches. Like the others, it’s unpasteurized.

Ingredients: Chinese cabbage, daikon radish, spring onion, gochugaru chili flakes, rice flour, garlic, dried tomatoes, shiitake mushrooms, ginger, salt (3,5%). May contain traces of gluten, nuts, soy, peanuts, and mustard seeds.
