BUCKWHEAT SAUCE FERMENTATION SET

In a large glass jar everything is ready to give you an up close and personal experience of umami sauce fermentation!

Admittedly, you won't use a large wooden paddle to stir an ancient barrel of koikuchi shoyu soy sauce in one of Japan's traditional breweries on the island of Shodoshima under the watchful eye of a fermentation elder, but you have to start somewhere - let it be your own kitchen!

The set consists of buckwheat bran from the Košak mill, corn from the Vila Natura organic farm and some Piran unrefined non-iodized salt. We grew koji mold, suitable for soy sauces (Aspergillus soyae) on the bran and the corn, then dehydrated them. All you have to do to start fermenting this mixture into a sauce is add about 1.8 l of water, mix and ... continue to regularly stir diligently and wait patiently. After 3 months all you have to do is filter the contents and season the chosen celebratory dish with your first homemade umami sauce!

If you are worried that you will not be able to tame microorganisms by yourself, let us reassure you that the set includes instructions for use and we are always available for advice and help by phone or via email and/or social networks. In short, we hold you by the hand and guide you safely through the turbulent sea of fermentation (no extra charge for the pep talk).

You get about 1 liter of buckwheat sauce from one set.

Salt content in the finished product: 12%. Store the sauce in the refrigerator.
